Kofta Meatballs

Ingredients for Kofta Meatballs (Step 1):

- ½ tablespoon Besan (gram flour)

- 1 tablespoon Crushed Poppy Seeds

- 1 tablespoon Chili Powder

- 1 tablespoon Dry Coriander

- 1 teaspoon Salt

- 1 tablespoon White Cumin

- 1 teaspoon Garam Masala

- 1 Kg Beef Mince

- 1½ Slices of Bread

- ½ Bunch of Green Coriander

- 1 Medium-Sized Onion

- 8–10 Cloves of Garlic

- 5–6 Green Chilies

- 4 one-inch pieces of Ginger

Prepare the Kofta Meatballs:

§ Start by roasting 1 tablespoon of Besan on low heat for 2–3 minutes until it releases a nutty aroma.

§ In a chopper, grind the Bread Slices until well crushed. Add chopped Green Coriander, Onion, Garlic, Ginger, and Green Chilies. Blend until smooth.

§ Combine the roasted Besan with this mixture. Add the spices: Salt, Chili Powder, Coriander Power, White Cumin Powder, and Crushed Poppy Seeds (or ground almonds if you prefer). Blend until well combined.

§ Add 1 kg Of Minced Beef to the mixture and grind until smooth. Lightly grease your hands and shape the mixture into smooth Kofta Meatballs.

§ You can freeze the Kofta Meatballs, if it is more than your requirement.


Ingredients for Kofta Curry (Step 2):

- 1 Large Onion

- 2 Tomatoes

- 4–5 Green Chilies

- 1 tablespoon Coriander Powder

- 1 teaspoon White Cumin Powder

- 1 tablespoon Red Chili Powder

- ½ teaspoon Turmeric Powder

- Salt to taste

- 1 tablespoon Garlic-Ginger Paste

- 1 cup Yogurt

- 1 stack Cinnamon

- 5–6 Black Pepper

- ½ White Cumin Seed

- 4–5 Cloves

- 1 Bay Leave

- 2–3 Green Cardamom


Prepare the Kofta Curry:

§ Boil the Tomatoes until the skin starts to separate. Then blend them into a paste.

§ Blend one large Chopped Onion with ¼ cup of water to make a smooth paste.

§ Heat ½ Cup of Oil in a pot. Add Green Cardamom, Bay Leaves, Cumin, Cinnamon, Cloves, and Black Pepper. Fry for 2–3 minutes.

§ Add the Onion Paste and cook until golden brown. Add 1 tablespoon of Garlic-Ginger Paste and a bit of water. Cook for 2–3 minutes until the Garlic is fragrant.

§ Gently add the Kofta Meatballs to the pot, shaking it to avoid breaking them, Fry Kofta Meatballs until its color change to brown (use a spoon to move them if needed). Add Turmeric Powder, Chili Powder, and Salt. Cook for 3–4 minutes, adding a little water to prevent burning.

§ Add the Tomato Paste and Green Chilies. Cook until the Tomato water reduces. Mix in 1½ tablespoons of Coriander Powder and 1 tablespoon of White Cumin Powder. Cover and cook for 2–3 minutes.

§ Stir in beaten Yogurt and cook for 3–4 minutes. Boil 1½ cups of water and add it to the curry. Simmer on low heat for 10 minutes.

§ Finally, if you like, add 3 Boiled Eggs to the Curry and garnish with Green Coriander. Serve with Chapati (Roti).
